Grilling Tip: Rest Your Steak!
Have you ever bought a perfectly marbled, thick cut steak from your butcher?
One that inspires daydreams of a crispy and caramelized outside paired with a tender, melt-in-your mouth, and juicy inside? Unless you are a vegetarian (and maybe ever if you are) you know exactly what I am talking about…
So you rush home, season and prep your steak with care, turn on the barbecue, and throw your steak on the grill. This is what you have been waiting for all day and so as soon as it is grilled to perfection you throw it on your plate and cut off a big bite…
STOP AND REWIND… did you rest your steak?
If you answer no or I don’t know, than you my friend, are sabotaging your own perfect steak! Resting the steak means letting the steak sit for about 5-7 minutes to allow all the juices to settle, before cutting into it. The result is a juicier and more flavourful steak – even more delicious than the steak you were imagining your entire car ride home!
Don’t believe me? You can try it at home by taking two similarly sized steaks and grilling them exactly the same. Once you are finished, put them on two separate plates. Cut into one steak right away than wait 5 minutes and cut into the second steak. Wait for 5 more minutes and then note how much liquid and juices are on each plate. Keep in mind; those are the very juices that make your steak both flavourful and moist.
